Job Description
ABOUT MCCORD BUTCHERY: McCord Butchery is a family-owned provisions shop that specializes in high-quality products including meats, cheeses, wines, and more. We are looking to add a talented and passionate individual to their growing team. The ideal candidate is someone who can help with both Front of House and Back of House Butchery duties. Individuals should be warm, welcoming, knowledgeable and a team player.
GENERAL SUMMARY OF DUTIES: For the front of house role, individuals should be able to maximize sales through a high level of service to our customers, always striving to go the extra mile. They should also be proud and passionate ambassador of McCord Butchery, who understands and promotes the company’s values. In the back of house portion of the role, individuals would be responsible for cutting and trimming bones, tying and grinding meats, using butcher's cutlery and powered equipment, such as an electric grinder and band saw, to portion and prepare meat in cooking form: Cuts, trims, and bones carcass sections or prime cuts, using knives, meat saw, cleaver, and band saw, to reduce to cooking cuts, such as roasts, steaks, chops, stew cubes, and grinding meat. Cuts and weighs steaks and chops for individual servings. Tends electric grinder to grind meat. Shapes and ties roasts. May estimate requirements and requisition or order meat supply May receive, inspect and store all products upon delivery. May clean fowl and fish. May be designated Head Butcher in his absence.
EXAMPLES OF DUTIES/ESSENTIAL FUNCTIONS: (Includes, but is not limited to the following:)
• Give a warm welcome to all customers
• Completes all tasks correctly and on time and follows company policies and procedures.
• Reflect the values of the brand in personal presentation and demonstrate passion for the brand
• Follows merchandising principles and replenishment guidelines in store to ensure that the brand is represented at the highest level
• Observes safety and security procedures. Reports any misuse or theft of stock to a member of management
• Must follow all established safety and sanitation procedures
• Ensure items are cut, boned and processed in accordance with shop’s specifications
• Assist in the receiving of products for quality, quantity, and established standards
• Cleaning and stocking as needed
• Regular, predictable attendance
• Other duties as assigned
PERFORMANCE REQUIREMENTS:
Knowledge, Skills & Abilities:
• Must be able to understand and comply with all company and departmental rules and regulations, policies and procedures.
• Skill in establishing and maintaining effective working relationships with staff and guests.
• Must possess knowledge of use, cleaning, and breakdown of equipment.
• Must maintain a high level of sanitation and safety.
• Must be able to maintain a consistent work speed under normal conditions.
• Must be able to supervise and instruct others, follow instructions, influence others, meet time requirements and problem-solve using independent judgment and decision-making skills.
EDUCATION AND EXPERIENCE:
Education: High school education or equivalent preferred.
Experience: 2 years kitchen and/or butchering experience PREFERRED.
TYPICAL WORKING CONDITIONS: Work may be in small areas having two-foot access. Work entails various conditions of noise level, temperature, illumination, air quality, crowding, balance, and handling of sharp and hot objects. Long hours with over time sometimes required. Work requires knowledge and the use of chemicals and equipment. Must maintain a proper sanitation environment.
TYPICAL PHYSICAL/MENTAL DEMANDS: (May be required to perform the essential functions of the position). Requires seldom sitting, bending and reaching from floor to 6 ft., balancing, lifting/carrying from 76-100 lbs., transporting, pushing, pulling and maneuvering of carts weighing up to 400 pounds; frequent standing and walking; normal hand/eye coordination, and manual dexterity. Requires normal senses of smell, taste, hearing, and touch. Requires the ability to distinguish letters and symbols. Requires the ability to perform simple tasks including basic math and English skills.

Pay: $13.00 - $18.00 per hour

About McCord Butchery
McCord Butchery is a locally owned and operated meat, seafood, and provisions market located at 210 Veterans Blvd, Suite A in Metairie. We offer the “old school” Butcher and Chef-Driven experience and service that used to be offered many years ago. Our customers are able to “handpick” their items as well as special order food products for parties or while entertaining at home. Our European style shop sells premium 30+ day aged USDA prime, dry-aged and wagyu beef as well as all-natural pork, poultry, veal, lamb and fresh seafood. In addition to the protein selections, McCord Butchery offers wine, locally sourced beer, local, regional and international cheeses. A selection of specialty provisions like oils, dry rubs, brine and more is available, complementing the fine meats and seafood.
