Job Description
FULL TIME POSITION:
Chef De Legume:
The Krewe of Red Beans is excited to grow our team and bring to life a unique position – Chef de Legume.
This person will be the founder / creator of our culinary program at Beanlandia. You will build from the ground-up a unique culinary experience that complements our Bean Museum and connects with the community we are building at Beanlandia. You will work with community members and children occasionally, sharing cooking methods and practices and inspiring others to enjoy beans. You will explore a never-ending rabbit hole of bean dishes from cuisines around the world and share them with the community during Bean Museum hours and events. You will manage and run our food and beverage program at Beanlandia, assist with events, and work to grow our program - with our Executive Director and team.
Requirements:
- Serious experience running a restaurant or a kitchen, ideally two years or more..
- Kind, nice person who is able to manage others and interact with the public – especially children.
- A hard worker who is self-driven and inspired by our mission and community-oriented goals.
- Excited to learn many types of bean dishes and explore various cuisines. Loves beans and is passionate about sharing them.
- Has food handling certificate and first aid/CPR certificate (or willing to get these within 6 months of employment)

Salary: $50,000 to 70,000 range based on experience to begin with possibilities of growth pending success of food and beverage program.

Other Responsibilities of the Chef de Legume
Food side:
- Ccreating a simple menu that is bean centered. Including traditional red beans and a steady simple menu (a soup, one or two appetizers, a main bean dish and a rotating bean dish). Our food costs can be lower than normal restaurant because we are mostly using beans*
- Bean Chef will also be able to cater events at Beanlandia, bringing added revenue
- Bean Chef’s goal is to achieve a break-even cost to revenue by end of year 1
· Planning, managing, and executing a series of special “dinner club” events at Beanlandia to help build up the bean program and for possible fundraisers.
· Create a “specials” menu that rotates with bean dishes from various cuisines
· Researching bean recipes from various cuisines around the world
- Maintain food and beverage inventory, including ordering and receiving. Work with General Manager to assure invoices are paid.
· Working with existing partnerships like Camellia and Beancentric
Admin side:
- Bean Chef will lead management of bar / restaurant and be responsible for keeping within budget.
- Maintain a clean, organized kitchen that follows all sanitation best practices, health code regulations, and OSHA safety standards.
- Maintain a calm, supportive, and respectful kitchen (no yelling at staff or other behaviors that are harmful to the community atmosphere of Beanlandia).
- Oversee and maintain permits and other administrative duties that relate to the food program/restaurant – including inspections, permits, reports, etc
- Manage budget and ensure our expenses, sales, revenue, and inventory for both kitchen and bar are tracked successfully.
- Develop and oversee all kitchen / bar procedures – opening, closing, etc
- Lead kitchen team – including other staff and any culinary learners.

Public facing side:
- Bean Chef will add to our social media - sharing bean recipes
- Help share bean recipes with the world (boosting bean consumption, which we will connect to our climate-goals and seek out more support from bean companies around America hopefully)
- Bean Chef will help with field-trips (opens us to grant funding)
- Bean Chef will be able to feed after-school programs at Beanlandia (which will open us to grant-funding)
- Exploring educational opportunities to teach beans, cooking, or hospitality to children / teens as future Beanlandia programming.
- Bean Chef will be able to teach cooking classes to adults and kids
- Possible collaboration with nutritionist for health education (and grant-funding)
