Saffron nola, the Vilkhu family’s James Beard nominated (Best New Restaurant 2018), stemming from their pop up restaurant of 6 years and their 26-year catering business. Executive Chef Arvinder Vilkhu marries his Indian heritage with local and global flavors while using both classical and modern techniques. His inspiration comes from his Grandmother’s worldly cooking style while his influence comes from New Orleans, France, Thailand, Singapore and China. Ashwin Vilkhu, GM and Bar director uses those same nuanced flavors and incorporates them into a thoughtful cocktail menu. Pairings were also taken into account when developing the wine menu, while paying very close attention to what varietals work best with South Asian food.
The super approachable menu is the Vilkhu Family’s communication of the evolution of Indian Cuisine. Like their dining table at home, the menu was designed for sharing, while showcasing what the Vilkhus grew up eating in New Orleans. When immigrating to the US, they were exposed to the bounties of Louisiana along with the unique fare and culture. They completely fell in love with New Orleans and everything it had to offer (gulf fish, gulf shrimp, oysters, gumbo, charcuterie, etc.) and the menu is a direct representation of that. They have maintained relationships with local farmers while embracing seasonal, sustainable and locally-sourced ingredients.
The Vilkhus have worked tirelessly alongside their amazing team to create a unique dining experience. Every detail was addressed in the creation and execution process while their overall goal is to provide quality food, superior service, and a warm-hospitable environment.
