JOB SUMMARY

The Banquet Chef will be responsible for efficient management of the Culinary Departments for Banquets and Room Service.

ESSENTIAL JOB
•Ensure total food quality, complete operation of all equipment, Culinary staff training, cost controls for food and beverage and financial responsibility for assigned areas.
•Responsible for administrative duties related to HR, ER, Finance, Purchasing, Convention Service and Sales.
•Manage food preparation activities at all stages for any Banquet and Room Service event. Responsible to ensure recipe standards are followed by Culinary staff at all times. Responsible for all standard menus for Banquets and Room Service, to improve food costs, volume, quality, attractiveness and preparation.
•Responsible to ensure equipment is clean and full operation at all times. •Conducts weekly inspection of all equipment using Health Department and/or approved standard checklist.
•Maintains record of these inspections and will include repair schedules of any equipment failures.
•Responsible for hiring, training and development of all Culinary/Stewarding personnel. Must be comfortable in leading a high-performing team, driving to excellence at all times.

QUALIFICATIONS
•College degree or Culinary Arts degree preferred.
•Six years experience in a large volume food establishment to include Banquets, buffet and/or specialty restaurants. Minimum two years culinary leadership (minimum equivalent role of Sous Chef) experience required.
•Strong managerial skills required.
•Must be creative with menu design.
•Must be able to maneuver in and around Kitchen area and other hotel/casino areas. Must be able to respond calmly in crisis and stressful situations.
•Must be able to respond calmly when handling guests and employee conflicts.
•Must be able to speak, write, and understand English.
•Must be able to stoop and bend, as well as maneuver up and down stairs.
•Must be able to lift up to 100 pounds.
•Must be able to push and pull carts up to 300 pounds.
•Must have manual dexterity to be able to type, grab, grip, pull, hold, tear, sort, reach, and file appropriate paperwork.
•Must be able to respond to visual and aural cues.
•Must be able to operate all kitchen equipment
