Harrah’s Casino in New Orleans has teamed up with local sports legend Archie Manning to open Manning’s Restaurant. Manning’s Eat Drink and Cheer will be a sports themed restaurant that is currently under construction on Fulton Street. Manning’s will be open for lunch and dinner 7 days a week and it scheduled to open in early 2012. The Southern-inspired menu will combine the straight forward dinner fare of Mississippi ("meat and three theme") with New Orleans favorites (Gumbo, P-Boys, Oysters, etc).

The Restaurant Manager will be responsible for all pre-opening responsibilities including but not limited to hiring the front of house staff, developing training programs and standard operating procedures and working closely with the construction and development team during the final stages of building. Once the restaurant opens, this individual will oversee the entire restaurant operations including financial performance, product production, service scores, inventory, personnel, and sales. Other responsibilities will include, but are not limited to:

•Accomplishes restaurant , bar, and retail objectives by recruiting, selecting, orienting, training, assigning, scheduling, coaching, counseling, and disciplining staff; communicating job expectations; planning, monitoring, appraising, and reviewing job contributions; planning and reviewing compensation actions; enforcing policies and procedures.
•Responsible for effective management schedules and ensuring that store is properly staffed for all day parts and sales volumes.
•Manage restaurant P&L to optimize manageable profit, control COGS, Labor, and Controlables (semi-fixed expenses).
•Expected to exercise good judgment in decision-making and regularly reporting issues to senior management at Harrah’s Casino.
•Oversee and manage all areas of the restaurant and make final decisions on matters of importance.
•Responsible for the development and achievement of the store’s business plan by working with the senior management team at Harrah’s New Orleans and our partner Archie Manning.
•Ensure guest service in all areas meets company standards. Maintains patron satisfaction by monitoring, evaluating, and auditing food, beverage, and service offerings; initiating improvements; building relationships with preferred patrons.
•Maintains safe, secure, and healthy facility environment by establishing, following, and enforcing sanitation standards and procedures; complying with health and legal regulations; maintaining security systems.
•Accomplishes company goals by accepting ownership for accomplishing new and different requests; exploring opportunities to add value to job accomplishments.
•Creates an environment of trust and respect through empowerment of staff at all levels. Encourages high morale, fosters teamwork and partnering among all team members.

Additional Requirements
•College degree or equivalent experience is required.
•At least 5 years in field of food and beverage preferred.
•Two years in food and beverage in a fine dining operation.
•Strong communication, supervisory and organizational skills are required.
•Proficiency in Microsoft Office required.
•Must be able to lift up to 10 pounds and carry up to 5 pounds.
•Must be able to bend, reach, kneel, twist and grip items while working at assigned desk area.
•Must be able to work at a fast pace and in stressful situations.
•Must be able to read, write, speak and understand English.
